With the cold virus circluating try out this soup to boost your immunity, its super healthy too at about 330 calories per serving and has added lentils to increase fibre intake, helping reduce the risk of type 2 diabetes as well as weight control both risk factors for heart disease. You can make this in about 30 mins! Serves 2 but just muliply the recipie for a handy freezer supply.

Ingredients:
- 1 small (1kg) Butternut squash- deeseed ( no need to peel)
- 1tbsp Olive Oil
- 1 Small Onion chopped
- 125g red lentils
- 1/2 red chilli ( more if you like it spicy!
- 800ml Vegetable stock
- 2tsp Tumeric
- Salt & Pepper

To Serve
- Sunflower and Pumkin Seeds
- Fresh Mint
- Crutons or Crusty Bread

- Put a large saucepan on a meduim heat with the olive oil
- Add onion Chilli, Garlic and seasonings
- Add the Stock, squash, & Lentils and bring to the boil, simmering for about 30 mins.
- Use a Hand blender to a smooth puree
- Sprinkle with seeds, mint
